Sourdough or white? Trust in gut reaction to provide the answer

The researchers noticed that the volunteers glycemic responses varied - and about half the people had a better response to the processed, white flour bread, and the other half had a better response to the whole wheat sourdough.

New research from the Weizmann Institute in Israel shows that white bread and brown bread don't seem to impact certain key health indicators in the body differently.

But when the team pored over their data, they discovered some of the participants had a better glycemic response to one type of bread, while other participants had the opposite response - so when averaged together, it only appeared there was no difference between the two types of bread.

They selected 20 healthy participants who were regular bread eaters - getting about 10 percent of their calories from the bread, a globally typical figure.

After 15 days, the diet of both the groups was reversed.

If you're automatically assuming that your sandwich is "healthier" for you because you used whole-wheat bread instead of white bread, then sorry, because that sandwich is LYING to you. However, a new study found no overall benefit at the community level of one type of bread over another.

She said: "Researchers were expecting to see differences in the rise in blood sugar after the participants consumed the white bread versus the wholegrain sourdough bread and they also looked to see if subjects' gut flora changed".

If you read "clean eating" blogs and follow #fitspo Instagrammers, you'd be forgiven for thinking that processed white bread is basically poison. So on investigating this particular aspect, researchers found that about half the people had a better response to the processed, white flour bread, and the other half had a better response to the whole wheat sourdough. Bridget Benelam, from the British Nutrition Foundation, highlighted that it contains more fibre than white.

Coauthor Avraham Levy highlighted another limitation of their study, namely people would eat less whole wheat bread in general due to its high-fiber content.

The researchers theorized that differences in the gut microbiome (the natural bacteria living in a person's intestine) may explain why people respond differently to different breads. Tthe study actually gave people more sourdough, however, since it was created to have equal amounts of carbohydrates in each two week period, and whole wheat has lower concentrations of available carbohydrates for a given weight.

"To date, nutritional values assigned to food have been based on minimal science, and one-size-fits-all diets have failed miserably".

"It may be that this is too small a group to detect potentially small differences but the fact remains that there was no measureable effect on health".
